Green Tomato Mincemeat - Not just for Christmas

I’ve been so busy ‘doing’ that I have had no time to blog over the last few weeks, but in response to the many, many requests, here is the recipe for Green Tomato Mincemeat I have been asked for so many times in the last couple of weeks.
Apologies to the originator of this recipe for posting it here. I really have tried to remember where the original came from, to credit you, but without success. I’m certain there have been a few tweaks along the way too. Anyway, this is a fabulous recipe and I heartily recommend it!

Tomato Mincemeat
2lb green toms (I have also made this with red tomatoes)
1/2lb chopped peel (optional - I’ve tried both versions)
Juice of 2 lemons
Rind of 1 lemon
3/4lb brown sugar
1lb apples, peeled and chopped into dice
1/2lb raisins and glace cherries
1 tsp mixed spice
1lb white sugar
1/2 cup white or red wine
Cook all together until tender.
Add 1 cup of rum or sherry when cooling, or use up whatever liqueurs you have lurking at the back of the cupboard! I’ve tried all sorts ;)
Pour into sterilised jars and seal with screw top lids, and label. Leave for a couple of months to mature.
This will keep for two years but we’ve always eaten it well before then. Great in Christmas mince pies but also delicious dolloped onto rice pudding at any time of the year.
